This recipe is my go-to when I’m craving something comforting, flavorful, and packed with nutrients. These stir-fry noodles bring together crisp sautéed vegetables, protein-rich tofu, and a creamy spicy peanut dressing that makes the whole dish come alive. It’s a perfect weeknight dinner that satisfies both your taste buds and your healing journey.

Ingredients:
- Rice noodles or whole wheat soba noodles
- Extra-firm tofu, cubed
- Mixed vegetables (cabbage, bell peppers, broccoli)
- Olive oil or sesame oil for sautéing
- 1–2 garlic cloves, minced
For the Spicy Peanut Dressing:
- 2 tbsp peanut butter
- 1 tbsp soy sauce or tamari
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 1 garlic clove, grated
- 1 tsp grated ginger
- 1 tsp honey or maple syrup
- Water to thin as needed
- Optional: chili flakes or sriracha for heat
Instructions:
- Cook noodles according to package instructions and set aside.
- In a pan, sauté tofu in a bit of oil until golden and crispy on all sides. Remove and set aside.
- In the same pan, add a bit more oil and sauté minced garlic until fragrant.
- Add chopped cabbage, bell peppers, and broccoli and stir fry until tender but still vibrant.
- Whisk together all ingredients for the peanut dressing.
- Toss noodles, tofu, and veggies with the dressing until well-coated.
- Garnish with chopped cilantro, green onions, or sesame seeds.
Serving Tip: Enjoy warm or cold. It packs well for lunch and tastes amazing for a rainy/cozy dinner night.
